Kale Quesadillas with Vinegar Salsa

1/2 head of kale
1 can pinto beans, drained
1/3 pound feta
dash of lemon juice
salt and pepper

Mix together all ingrediants, then stuff tortillas. Grill in a pan!

1 yellow tomato
1/2 cup grape tomatoes
1/4 cup red onion
1/4 cup cilantro
1/4 cup red bell pepper
1/4 cup balsamic vinegar
salt and pepper

Chop ingrediants, mix and cover. Ideally let salsa sit over night, but at least 1 hour.
